  • 2 Large Boneless Skinless Chicken Breasts
  • 1 Small Can Diced Green Chilies
  • 3 Cloves Garlic, Chopped
  • 1 Can Fire Roasted Tomatoes
  • 1 Cup Frozen Corn
  • 1/2 Cup Chopped Cilantro (Fresh)
  • 1 Can Great Northern (White) Beans
  • 1 Avocado
  • 1 Package Soft Tortillas
  • Salt and Pepper to taste
  • 1 Lime

Instructions:

  1. In a large saucepan, combine the chicken breasts, diced green chilies, chopped garlic, fire-roasted tomatoes, frozen corn, and chopped cilantro. Cook over medium-low heat, covered, for approximately 1 hour, or until the chicken is cooked through and shreds easily.
  2. Remove the chicken breasts from the soup and shred them. Return the shredded chicken to the soup.
  3. Add the Great Northern Beans to the soup and squeeze the juice of half a lime into the pot. Continue to cook over low heat.
  4. Preheat the oven to 350 degrees. Place the soft tortillas in a single layer on a flat baking sheet. Rub each tortilla generously with the cut side of a lime. Season the tortillas well with salt and pepper.
  5. Using a pizza cutter or knife, cut the tortillas into bite-size strips or triangle chips. Bake in the oven for 10-15 minutes, or until crisp. Keep an eye on them so they don't burn.
  6. Serve the Cilantro Lime Chicken soup with the tortilla strips, a sprinkle of fresh cilantro, and a few slices of avocado on top. Enjoy!
