Each week, #SundaySupper focuses around a theme. The theme for this week: #BeatTheHeat
I don’t know what it’s been like where you are, but here – It’s hot. The last few days have been much better, but we’re headed right back toward crazy hot next week. I’m not one for standing over a hot stove for an hour or having my oven pumping hot air into an already hot house, so I’ve been looking for ways to keep my family fed with low cook/no cook recipes or things I can make ahead (like in the morning) and serve later for dinner.
This week for #SundaySupper I have a Cold Cucumber and Rice Salad. The beauty of this recipe is that it’s low cook AND is cooked ahead. It’s the perfect accompaniment to grilled chicken or pork (we had pork chops with ours) and some grilled veggies.
Cold Cucumber and Rice Salad
3 cups cooked rice (white or brown)
1 medium seedless cucumber, diced
1/4 cup diced sweet onion
1/2 cup white vinegar
3 tablespoons granulated sugar
2 teaspoons fresh or freeze-dried dill
1/2 teaspoon salt
1/8 teaspoon black pepper
The hardest part of this whole process is cooking the rice. That’s it.
Once you’ve cooked and cooled your rice, it’s simply a matter of mixing everything together and allowing it to sit in the refrigerator for a few hours before serving.
It’s cool, has a nice crunch and a little bite.
For a variation, you can also add halved cherry or grape tomatoes.
I hope you and your family are finding ways to #BeatTheHeat this summer. It looks like it will be a long one!

Gorgeous salad! Cucumber and rice are such a unique combination.
Rice and cucumbers in a salad – what a great idea and something that would never have occurred to me. Welcome to #SundaySupper! Love those bowls, by the way.
Okay, I’ve never had a rice salad! Sounds delicious!
I’m loving all the variations on cucumber salad today! But this one is truly unique! I’ve never had rice salad, but will try your recipe!

A refreshing, crunchy and perfect combination to beat the heat! Welcome to the group
I must make this cucumber rice salad, since we make rice every day! Thanks for sharing your Sunday Supper !
Great side dish and I am thinking it would be wonderful with grilled pork or chicken.
Wonderful combination and I love the coolness of cucumbers, refreshing. Lovely recipe. This was my first post for #Sunday Supper slao.
This is definitely something I want to try. Do you specifically use a longer grain rice to let the rice take on that crunch?
I’m thinking it may be delicious also with the chewy texture of a short grain brown rice. Def going on my to try list.
When I think cucumbers, I definitely think COOL! This sounds like a perfect side dish to beat the heat – heck, I could probably make a meal out of it! =)
This looks like a great summer salad! Thanks for sharing!
This is perfect for a hot day. I am loving the salad.
This is actually a lot like sushi with the vinegar and cucumber. I bet it was very refreshing! Nice recipe.
Wow, this sounds really yummy and like nothing I’ve had before! I can’t remember ever having a cold rice-based salad. I’m totally going to try this! Thank you for sharing!
Sounds yummy!
Welcome to #SUndaySupper. This sounds so interesting. I think I would love it. My Hubby won’t eat cukes, so I may have to make this for lunch the next time I have leftover rice.
