Smoked Turkey Sausage, Wild Rice and Kale Soup { It's Still Winter - Soups on for #SundaySupper }

  • 1 Sweet Onion, Chopped
  • 3 Cloves Garlic, Minced
  • 2 Tablespoons Butter
  • 1 (13 oz) Turkey Smoked Sausage, Cut in half lengthwise and sliced
  • 64 oz Chicken Broth or Stock
  • 1 box (6 oz) Uncle Ben's Long and Wild Grain Rice Blend
  • 4-5 Large Kale Leaves, Stems removed
  1. In a large stock pot, melt the butter over medium heat.
  2. Add the onion and garlic and cook for 2-3 minutes until the onions have softened and the garlic is fragrant.
  3. Add the smoked sausage, chicken broth or stock, rice and seasoning packet to the pot.
  4. Stir to mix.
  5. Bring the contents of the pot to a boil.
  6. Reduce heat to low-medium and simmer 25 minutes.
  7. Tear the kale into bite size pieces and stir into the soup mixture.
  8. Allow to cook an additional 5 minutes before serving.
