I may be late to the #SundaySupper party this week, but I’m here! It’s Superbowl Sunday, and I don’t know what that means at your house, but at mine it means we don’t eat a single ‘real’ meal, rather smaller snack type munchies all day long. Thanks to ESPN, the football coverage started early this morning and this commercial watching mama doesn’t see herself getting a break anytime before bed.
Do you have old favorites you jump to for Superbowl munchies?
We’re munching on some fantastic “grilled’ buffalo chicken sandwiches here for lunch, with an veritable smorgasbord to come this afternoon.
Have you figured out the “grilled” part yet? Yep, these are made in the waffle iron! They are fast, can be made 1 at a time or in large batches, and are best served once they’ve cooled. Hubs tends to not eat a ton of food at lunch… he ate two whole sandwiches. Despite using all prepared/packaged ingredients, you could never tell it. Will you add these to your menu?
- 1 can Cooked Chicken Breast (Family Size)
- 2 Tbsp Wing Sauce (Use your favorite, I use Franks)
- 3 oz Bleu Cheese Crumbles
- 12 Slices White Sandwich Bread (crust on or off, your choice)
- 2 Tbsp Bleu Cheese Dressing
- 1 cup Shredded Carrots
- 2 Celery Stalks, julienned
- Pre-heat your wafflie iron on a Medium setting. If you don’t have a waffle iron, you can use a non-stick skillet, you’ll just have to flip the sandwiches to cook both sides.
- Open and drain the cooked chicken.
- Mix the chicken and wing sauce.
- Divide the mixture evenly to top 6 slices of the bread.
- Sprinkle the bleu cheese evenly over the 6 chicken topped slices.
- Cover with the remaining 6 slices of bread.
- Cook the sandwiches, one at a time, in the waffle iron. You will need to press slightly to get the waffle iron to latch.
- As the sandwiches are cooking, mix the carrots, celery and bleu cheese dressing.
- Serve the cooled sandwiches with the veggie salad.
