Make Ahead Muffin Tin French Toast

Every year, around September or so, several friends and I ditch our husbands, run away from our kids and head to the beach for a few days.  This year we landed in Surfside Beach, South Carolina.  Generally we don’t head down until Friday, but this year we decided to take off after work on Thursday and get started a little early.  As part of that grand plan, we made a stop at the grocery store on the way down to grab what we’d need for a little make-ahead breakfast treat we stumbled upon on Pinterest.
Mom E and the Joyful Three shared a great recipe for Make-Ahead Muffin Tin French Toast on WhatToExpect.com.  We decided shortly after seeing it that we’d be having it for breakfast on Girl’s Trip 2011.

These we yum, yum, yummy.  Even before they were baked.  Pre-egg mixture, of course.  I doubled the recipe and made two pans, so they took just a bit longer than the recipe suggested.  I would also suggest spraying the muffin liners so that the bread won’t stick.  Aside from that, these were awesome!  There were really very little trouble to put together, and since I could do it the night before, I left pulling them out and sticking them in the oven up to one of the other ladies.  Sleeping in… winning!

Unfortunately, the focus fell on my bacon here, but you can still see the golden crusty goodness in the back ground.  The bacon was a bonus.  These are a must try!  I look forward to making them again.
