Cookies are a holiday tradition all over the world. I’m not sure if it’s because we’re already in the kitchen (so why not bake) or just because we all love to indulge before the New Years resolutions hit. Maybe it’s because nothing says ‘I Love You’ like a cookie baked from the heart. Whatever the reason, cookie recipes are plentiful and you can generally find something for everyone on your holiday list.
My Salted Caramel Cookies are a break from the norm. How many cookies have you seen that are sprinkled with salt? There’s a magic that happens when you mix caramel and salt. The people at Starbucks hit the nail on the head with their Salted Caramel Mocha (even my non-coffee-drinking husband is hooked) and I couldn’t miss jumping on the bandwagon.
Salted Caramel Cookies
(Makes 4 dozen)
1 cup butter softened
1 cup white sugar
1 cup packed light brown sugar
2 eggs
2 tsp vanilla
3 cups flour
1 tsp baking soda
48 soft caramels
1 cup white sugar
1 cup packed light brown sugar

Sea SaltPreheat your oven to 375. In med bowl, beat butter and sugars together, then add eggs and vanilla. Mix those in until everything is well incorporated.
In separate bowl, mix the flour and baking soda. Add the flour mix to sugar mix a little at a time. Mix Well.Take one scoop of dough and wrap it around each of the caramels, forming balls. Sprinkle the balls generously with sea salt.
Bake on a non-stick cookie sheet for 7 to 10 minutes. Allow to cool a few minutes on the pan before attempting to remove.
If you wanted to make a ‘mocha’ version, try adding a little mocha or cocoa powder to your dough.
