Smoked Turkey Sausage, Wild Rice and Kale Soup { It’s Still Winter – Soups on for #SundaySupper }

The groundhog may be expecting an early spring, but it very much still feels like winter here!  At least today.  Our weather is so wishy-washy here that I often don’t know how to dress myself or the kids from one day to the next.  We’ve had several days of cold rain this week, snow last week and the forecast for tomorrow is 60 and sunny.  I’m pretty sure Mother Nature is having mood swings.

Turkey Smoked Sausage and Kale Soup

When I’m feeling cold to the bone, I usually turn to a bowl of soup to warm me up.  Yes, sometimes I grab the sodium packed stuff in the can, but I usually opt for making something myself.  Some soups cook all day, some only a few hours, but there are times you just don’t want to wait that long.  This soup is for you.  It’s quick and hearty, and can easily be made to feed a crowd.

There’s nothing quite as comforting as soup.

Serves: 6
  • 1 Sweet Onion, Chopped
  • 3 Cloves Garlic, Minced
  • 2 Tablespoons Butter
  • 1 (13 oz) Turkey Smoked Sausage, Cut in half lengthwise and sliced
  • 64 oz Chicken Broth or Stock
  • 1 box (6 oz) Uncle Ben's Long and Wild Grain Rice Blend
  • 4-5 Large Kale Leaves, Stems removed
  1. In a large stock pot, melt the butter over medium heat.
  2. Add the onion and garlic and cook for 2-3 minutes until the onions have softened and the garlic is fragrant.
  3. Add the smoked sausage, chicken broth or stock, rice and seasoning packet to the pot.
  4. Stir to mix.
  5. Bring the contents of the pot to a boil.
  6. Reduce heat to low-medium and simmer 25 minutes.
  7. Tear the kale into bite size pieces and stir into the soup mixture.
  8. Allow to cook an additional 5 minutes before serving.

  24. I’m with everyone else, I love rice in soups and I really need to add it more often. This sounds terrific and pretty healthy!

  25. I totally understand wishy-washy weather. Though to most our weather is simply flat-out cold..there is cold and there is COLD!!! But our weatherman is useless. The only thing reliable on our weather app is the current temperature. You can hope that the 24 hour forecast is close, but anything beyond that, forget it. Look out your window – that’s the best source, LOL

    Would this soup hold up to being frozen and re-heated? I live alone, but when I cook I make sure to make enough to freeze for an easy dinner later. This soup sounds amazing so I am hoping it is freeze-able!
