Spaghetti and Shrimp with Arugula and Lemon Sauce at MamaMommyMom Yummy From time to time, I get to preview cookbooks through publishers before they hit the shelves, and admittedly, I wasn’t in a huge rush to pick up this particular freebie – The Complete Leafy Greens Cookbook. With the holidays and all that jazz, I was just so busy!  Wow, you guys, just wow. I can’t even begin to tell you how sad I am that I hadn’t taken the time to go through this cookbook before now. I found the original version of this recipe in The Complete Leafy Greens Cookbook. It sounded delicious and looked so easy!

I made very little adjustment to the original recipe, the biggest thing was my addition of the shrimp. The best part about this whole dish, aside from being 100% fresh and having an amazing flavor that really *pops* in your mouth, is that it is quick!  Using pre-cooked shrimp (on sale), I was able to complete the sauce in less time than it took me to cook the pasta.  For a busy mom, that’s a total score!

The Complete Leafy Greens CookbookSusan Sampson, the author of The Complete Leafy Greens Cookbook, has compiled an amazing index of more greens than I even knew existed.  Each green is indexed with a thorough and extensive breakdown of what you can expect as far as flavor, preparation and availability.  I also really enjoy the recipes being grouped together by green variety verses type of recipe.  It made it easy to check out the recipes I knew I’ve be able to get the appropriate greens to make.

You can check out the original recipe, plus 249 others, in The Complete Leafy Greens Cookbook.  As someone who enjoys a good meat-free meal, I look forward to trying out several other recipes in the book.  If you’re vegan, gluten-free or otherwise diet restricted, there are a lot of great ideas in here for you!

Spaghetti & Shrimp with Arugula and Lemon Sauce {The Complete Leafy Greens Cookbook}

Serves: 4-6
  • 16 oz package Spaghetti Noodles
  • 3 Tablespoons Salted Butter
  • 2 Tablespoons Olive Oil
  • 1 Bunch Green Onions, sliced (white and green parts)
  • 1 Teaspoon Garlic Powder
  • 2 Lemons
  • 1 Teaspoon Sea Salt
  • ½ Teaspoon Pepper
  • 1 Cup Heavy Cream
  • 1 Bunch Arugula, stems removed and finely chopped
  • 1 LB Fully Cooked Shrimp
  • ¼ Cup Grated Parmesan Cheese
  1. In a large pot of boiling salted water, cook pasta according to package directions.
  2. While the pasta cooks, combine the butter and olive oil in a large skillet over medium heat.
  3. Add the onions and cook until softened, about 1 minute.
  4. While the onions are cooking, zest and juice the lemons. Zest should be finely chopped.
  5. Add the garlic powder, lemon zest, lemon juice, salt and pepper. Stir to combine.
  6. Stir in the cream and arugula.
  7. Add your cooked shrimp and allow to heat through for about 1 minute.
  8. In the meantime, drain your pasta (reserving about 1 cup of the cooking water) and return it to the pot.
  9. Pour the cream sauce over the pasta, add the Parmesan cheese and toss to coat. Use the reserved cooking water to thin the sauce as needed.
