Thai Shrimp Noodle Salad

Prep Time: 15 minutes

Cook Time: 10 minutes

Yield: 12 Servings

Thai Shrimp Noodle Salad


  • 1 package No Yolks Broad Noodles
  • 24 oz medium cooked shrimp
  • 6 carrots, peeled and julienned
  • 3 small seedless cucumbers, julienned
  • 2 large bell peppers, red and orange, seeded and thinly sliced
  • 6 green onions, chopped
  • 1 cup cilantro leaves, chopped
  • Dressing:
  • 6 garlic cloves, peeled and pressed
  • 2-inch piece of fresh ginger, peeled and grated
  • 3 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon hot chile sauce
  • 3/4 cup creamy peanut butter
  • 1/3 to 1/2 cup coconut milk


  1. Cook the noodles according to package instructions. Rinse in cold water and set aside.
  2. In a large bowl combine the cooled noodles, shrimp, veggies, and cilantro. Add the dressing ingredients to a blender and pulse until smooth, adding more coconut milk as needed until desired thickness is reached. Pour dressing over the noodle salad and toss to coat. Serve immediately.
