Did you guys miss me? I’ve been a little under the weather for the last few days, but I’m back and ready for another week of #SundaySupper.
With football season in full swing, we’re talking tailgating this week! Who doesn’t love a snack-filled supper, perfect for sharing with your family and friends while you cheer on your favorite team? I know I do! This week I’ve got something so simple, even the most inexperienced cook can do it. And these little bites have a bite of their own!
My inspiration for this was stuffed jalapenos. I love, love, love them. Sadly, they can get a little messy, don’t really transport very well and are only really at their best when they are piping hot. I needed something a little more versatile, more room temperature friendly and something that won’t drip down my arm.
Cheddar Cheese Jalapeno Bites
(makes 16)
1 can Pillsbury Crescent Rolls
6 oz jarred Diced Jalapeno Peppers, drained
4 oz Medium Cheddar Cheese, Shredded
First things first, preheat your oven to 375 degrees. Grab yourself a baking sheet or stoneware pan and prepare an area to assemble the bites.
On a plate or in a shallow dish, mix together the jalapenos and the cheese.
Unroll the crescent dough, separate the 8 triangles and cut each in half lengthwise to create a total of 16 triangles.
Press one side of each triangle into the cheese and pepper mixture. With the cheese/jalapeno side up, roll each triangle up, starting from the larger end. Repeat this with all 16 pieces of dough.
Place the rolled bites onto your pan and bake them for approximately 10 minutes or until they are golden on the outside and cooked through in the center. Times may vary slightly depending on your oven.
The finished product is two-bite sized, easy to handle and packs a whole lot of punch. No drippy cheese or juices here, just all the flavor of stuffed jalapenos without any of the mess.

mmm…cheese & pastry is right up my alley (although I can’t really eat things that are too spicy…I didn’t grow up eating spicy foods so I have a very low tolerance!). This is a brilliant way to get the same effect of a stuffed jalapeño in a transportable package.
Anything with jalapeño and cheese is a winner in my book!
